BBQ Hickory Turkey Breast with Herb Butter  
  1/2 Fresh turkey breast - (about 3 lbs)
  The Marinade:  
  1/4  cup Vegetable oil  
  1/4  cup Soy sauce  
  2 tablespoons Catsup  
  1 tablespoon Vinegar  
    Dash-it w/ Black pepper, freshly ground -- to taste  
  1 Garlic clove -- minced  
  1/4  teaspoon Ground ginger  
  1. Combine marinade ingredients.    
  2. Marinate turkey breast in the refrigerator for at  
  least 8 hours, turning occasionally.  
  3. Grill over hot coals w/ hickory chips until a meat thermometer  
  Reaches 160-165 degrees (or approximately 15 minutes per pound  
  at 350 degrees).  Baste turkey while grilling.  Remove lid for the  
  last 10 to 20 minutes so that meat will brown.  
  Let the Turkey rest for 10 minutes before slicing  
  The Herb Butter:  
  1/4  cup Melted butter  
  3/4  teaspoon Thyme -- crushed  
  1/2  teaspoon Rosemary  
  1/8  teaspoon Paprika  
  2 Garlic cloves -- minced  
  1. For herb butter, combine all ingredients and set aside.  
  Slice turkey, brush with herb butter if desired, and pass with  
  additional herb butter.    
  This recipe serves 4.  
      BBQ Glazed Turkey Steaks  
  2 tablespoons   Orange marmalade  
  1 tablespoon    Lemon or lime juice  
  2 teaspoons     Soy Sauce  
  1 Garlic clove -- minced  
  1/4  teaspoon      Curry powder  
  4 Turkey breast tenderloin steaks -- (about 4 oz each)  
  1. For glaze, in a small bowl stir together marmalade, lemon   
  or lime juice, soy sauce, garlic, and curry powder.    
  Brush some of the glaze over both sides of turkey steaks.  
  2. Grill turkey on an uncovered grill directly over medium coals  
  for 6 minutes.  Turn and brush with glaze.  Grill 6 to 9 minutes   
  more or till turkey is tender and no longer pink.  
  Broiling Directions:    
  1. Place turkey on unheated rack of a broiler pan. Broil 4 to 5   
  inches from heat for 3 minutes.  Turn and brush with glaze.    
  Broil 3 to 5 minutes more or till no longer pink.
